the apiary

Our neighbor and now friend, beekeeper Roy, was so eager and willing to share his knowledge and wisdom of the natural wonders into the world of the bees. With his informed guidance, we knew the bees had an important and necessary role on our farm. As pollinators of our food sources, we feel the bees are our keepers, not the other way around. As for the honey they produce, honey bees must visit two million flowers to produce one pound of honey.  We reverently extract this food that belongs to the bees. Every sweet spoonful is to be savored and each flower essence discovered.

If we have not found the heaven within, we have not found the heaven without
— James Hilton, Lost Horizon

The bee collects honey from flowers in such a way as to do the least damage or destruction to them, and he leaves them whole, undamaged and fresh, just as he found them
— Saint Francis de Sales
